Roasted Squash Hummus with Feta Cheese Appetizer

HUMMUS INGREDIENTS:

-12oz Chickpeas (pre-cooked or canned)

-12oz Roasted Butternut Squash

-.75 Tablespoon roasted garlic puree

-zest of half a lemon finely minced

-juice of 1 lemon

-half an ounce of tahini

-5.25 ounces of canola oil

-1 tablespoon smoked salt

-.half a tablespoon ground black pepper

-.25 teaspoon Ras al Hanout

1.       Cook the squash up to 2 days in advance before assembling the recipe. Cut the squash into roughly large size pieces. Coat them with approximately 3 tablespoons of canola oil (not listed in ingredients list) and salt and pepper to taste and bake for approximately 25 minutes at 350 F degrees till tender.

2.       Cool down completely and refrigerate preferably overnight.

3.       TO ASSEMBLE:

Combine the chickpeas and cooked squash in a food processor and puree for approximately 2 minutes till very smooth.

Add the remaining ingredients and puree for another 2 minutes.

Store in refrigerator preferably overnight to allow flavors to blend together.

To serve: top with feta cheese to taste and sprinkle with chopped fresh herb
